The Deer

So yesterday, was definitely not a normal day for us. Here I am getting ready to go to CDM's Meet N Greet in stockton. Nick comes home and says look what I got, now I dont know what to think. So I follow him outside and my jaw dropped. There is a dead Deer on the roof of our car. I guess some truck in front of them hit it, him and his friend picked it up and brought it home to eat. And guess what they did, my cousin has a freeze full of deer meat. I have no clue what to do with it. So if you live in the area and want some deer steaks let me know :)

Baby Citrus Cheesecakes

Baby Citrus Cheesecakes

Bake: 20 minutes Prep: 25 minutes Chill: 2 hours

Ingredients

  • 12  vanilla or chocolate wafers
  • 1 8-oz. pkg.  cream cheese, softened*
  • 1 3-oz. pkg.  cream cheese, softened*
  • 1/2  of an 8-oz. carton  mascarpone cheese*
  • 1/2  cup  granulated sugar
  • 1  Tbsp. all-purpose flour
  • 1  tsp. vanilla
  • 2  eggs, lightly beaten
  • 1/2 tsp. finely shredded lemon peel
  • 1/2  tsp.finely shredded orange peel
  • Whipped cream
  • Glazed Kumquats (optional)

Directions

1. Line 12 2-1/2-inch muffin cups with paper bake cups. Place a vanilla or chocolate wafer on the bottom of each bake cup.
2. For filling: In a large mixing bowl, beat cream cheese, mascarpone cheese, sugar, flour and vanilla with an electric mixer until combined. Stir in eggs, lemon peel and orange peel.
3. Pour filling into muffin cups, filling 2/3 full. Bake in a 350 degree F oven about 20 minutes or until edges are set.
4. Cool in pan on wire rack (centers will sink slightly). Remove and chill for at least 2 hours. Top each serving with a dollop of whipped cream and a kumquat slice, if you like. Makes 12 servings.
*If you don't have macarpone, substitute two 8-ounce packages cream cheese, softened, for the mascarpone cheese and 3-ounce package of cream cheese.
6. Glazed Kumquats: Halve kumquats. In a small saucepan stir together 1/2 cup sugar and 1/2 cup water. Heat to simmering, stirring to dissolve sugar. Add kumquats. Cook about 10 minutes or until syrup thickens and kumquats soften. Remove from syrup, allowing excess to drip off, and cool on a parchment paper-lined baking sheet.

Rugelach

Rugelach 


Ingredients 

8 ounces cream cheese, at room temperature
1/2-pound unsalted butter, at room temperature
1/4 cup granulated sugar, plus 9 tablespoons
1/4 teaspoon kosher salt
1 teaspoon pure vanilla extract
2 cups all-purpose flour, plus more for rolling
1/4 cup light brown sugar, packed
1 1/2 teaspoons ground cinnamon
3/4 cup raisins
1 cup finely chopped walnuts
1/2 cup apricot preserves, pureed in a food processor
1 egg beaten with 1 tablespoon milk, for egg wash



Directions

Add the cheese and butter to the bowl of an electric mixer fitted with the paddle attachment and beat until light. Add 1/4 cup granulated sugar, the salt, and vanilla. With the mixer on low speed, add the flour and mix until just combined. Dump the dough out onto a well-floured board and roll it into a ball. Cut the ball in quarters, wrap each piece in plastic, and refrigerate for 1 hour.


To make the filling, combine 6 tablespoons of granulated sugar, the brown sugar, 1/2 teaspoon cinnamon, the raisins, and walnuts.


On a well-floured board, roll each ball of dough into a 9-inch circle. Spread the dough with 2 tablespoons apricot preserves and sprinkle with 1/2 cup of the filling. Press the filling lightly into the dough. Cut the circles into 12 equal wedges-cutting the whole circle in quarters, then each quarter into thirds. Starting with the wide edge, roll up each wedge. Arrange the cookies, points tucked under, on a baking sheet(s) lined with parchment paper. Chill for 30 minutes.


Preheat the oven to 350 degrees F.


Brush each cookie with the egg wash. Combine 3 tablespoons granulated sugar and 1 teaspoon cinnamon and sprinkle on the cookies. Bake until lightly browned, about 15 to 20 minutes. Remove from the oven to a wire rack and let cool. Arrange on a large platter and serve.

Busy Busy

Well I intended on posting sooner, but with everything in the last couple of weeks, that was just impossible. It seems that my life by the day is getting crazier! Mikhail started head start, went trick or treating, we had our CalDeltaMommies pizza party (it was a blast) And now its already November, time really does fly fast when you have kids, I remember the year would drag out, especially the 9 months of pregnancy. (that didn't move fast enough) Mikhail had his hearing test yesterday, looks like the right ear might be plugged, so back to the doctor later today to see what he says. Going to keep Mikhail home today from school since he is running a fever, believe its just teething though.

Will update about his appointment later today :)

Didn't get the job

Well, just got the email, did not get job.
I thought I did really well, better than I usually do,  I wasn't as tense, it was in the office it was at a starbucks so I didn't feel like I was being watched by other employees. Emailed the manager to follow up, on Tuesday, got the email this morning saying they went with another candidate. Maybe I should check out how to apply for Lifetime's New show The Job Fairy lol. Guess back to hitting craigslist, monster, and careerbuilder. Maybe one day a job will just fall into my lap (I'll keep wishing)
